BBQ Pepper Chicken is a smoky, spicy, and tender chicken dish that combines the bold flavors of black pepper and BBQ sauce. Perfect for grilling or roasting, this dish will bring a flavorful kick to your meal.
Ingredients:
- 4 chicken leg quarters or chicken breasts
- 2 tbsp olive oil
- 1 tbsp freshly ground black pepper
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cayenne pepper (optional for heat)
- 1/4 cup BBQ sauce (your choice of flavor)
- Salt to taste
- Fresh parsley, chopped (for garnish)
- 1 tbsp lemon juice (optional for extra tang)
Preparation:
- In a small bowl, combine olive oil, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and lemon juice. Mix well to form a marinade.
- Rub this mixture generously over the chicken pieces, ensuring they are coated evenly on all sides.
- Cover and refrigerate the marinated chicken for at least 1 hour (overnight for best results).
Cooking the BBQ Pepper Chicken:
- Preheat the grill to medium-high heat. If using an oven, preheat to 400°F (200°C).
- Place the marinated chicken on the grill or in the oven. Cook for 25-30 minutes, turning the chicken halfway through for even grilling or roasting.
- During the last 5 minutes of cooking, brush the chicken with your favorite BBQ sauce to add a glaze and extra flavor.
- Once the chicken is fully cooked (internal temperature of 165°F or 75°C), remove from the heat.
